Coconut, Blueberry & Lime Panna Cotta


Serves: 4 


 

Ingredients

Coconut Layer

  • 400mL tin coconut milk
  • 200mL macadamia milk
  • 2 tablespoon maple syrup
  • 2 1/2 teaspoons agar powder

Blueberry Layer

  • 1 cup macadamia milk
  • 1 cup blueberries
  • 2 1/2 teaspoons agar powder
  • 1 tablespoon maple
  • Zest & Juice 1 lime
  • 1 cup Food for Health Blueberries, Vanilla & Teff Gourmet Protein Muesli
  • Kiwifruit slice


Directions

  1. Coconut mixture: Place coconut milk, macadamia milk, maple and agar in pot and whisk to combine agar.
  2. Place over medium heat and stir until almost boiling.
  3. Take off heat and allow to cool in pot.
  4. Pour evenly into 4 glasses of your choice.
  5. Blueberry mixture: Place macadamia milk, maple and agar in pot and whisk to combine agar.
  6. Place over medium heat and stir until almost boiling.
  7. Take off heat and allow to cool in pot.
  8. Once the coconut layer has set in fridge, poor blueberry mixture evenly on top of coconut layer.
  9. Place in fridge and allow to set for 2 hours.
  10. Once panna cotta has set, squeeze lime juice over each panna cotta.
  11. Top with 1/4 cup Food for Health Blueberries, Vanilla & Teff Gourmet Protein Muesli in each glass.
  12. Add the lime zest
  13. Serve chilled with a slice of Kiwifruit.
