Blueberry & Lime Cheesecake


Makes: 12 slices


Ingredients

Base

  • 150g Food for Health Gourmet Protein Muesli
  • 150g dried figs
  • 20g cacao butter

Lime Layer

  • 2 cups soaked cashews
  • Juice & zest, 3 limes
  • Handfull of spinach
  • 30mL maple syrup
  • 50mL coconut milk
  • 50g cacao butter, melted

Blueberry Layer

  • 2 cups soaked cashews
  • 100g blueberries
  • 20mL maple syrup
  • 50mL coconut milk
  • 70g cacao butter, melted


Directions

  1. Base: Place all ingredients in a food processor and blend until combined.
  2. Cover base of a round cake tin with baking paper.
  3. Press base mixture evenly on bottom of tin.
  4. Refrigerate while you do lime layer.
  5. Lime Layer: Place all ingredients in a food processor and blend for approximately 10 minutes, until smooth.
  6. Pour mixture over base.
  7. Refrigerate for at least 30 minutes.
  8. Blueberry Layer: Place all ingredients in a food processor and blend for about 10 minutes, until super smooth.
  9. Pour mixture over the lime layer and spread evenly.
  10. Refrigerate for at least 6 hours, or preferably overnight.
