So what is Teff?
Teff is the new guy on the superfoods block. He certainly packs a nutritional punch and is easy on the digestion. Teff seeds are derived from an Ethiopian grass called Eragrostis Teff. It is like the African’s version of rice. It has been consumed for thousands of years and yet we are just finding out about this revelation. A little bit the chia phenomenon.
So what are the health benefits of teff? Teff is tiny, smaller than a chia seed, but indeed packs a powerful punch. Consisting of mostly bran and germ, it leads all other grains by a wide margin.
Teff is high in resistant starch and dietary fibre. It is high in protein, providing 8 essential amino acids. It is high in calcium, iron and Vitamin C.
For people with food allergies it is wheat free, gluten free, yeast free.
