Gluten Free Biscuits
The Gluten Free Biscuits are an idea snack for people with diabetes.Ingredients
- 45g (1 cup) gluten free cornflakes
- 130g (1 cup) Food for Health The Gluten Free Muesli
- 1 ½ tablespoons gluten free self-raising flour
- ¼ cup SPLENDA Granulated Sweetener
- 1 egg
- 20g 40% reduced-fat sunflower spread, melted, cooled
- 1 tablespoon 100% apple juice
Directions
- Preheat the oven to 180°C. Line 2 baking trays with baking paper.
- Put cornflakes, muesli, flour and sweetener and blend ingredients.
- Put the egg, spread and apple juice in a separate bowl and combine ingredients.
- Add the egg mixture to the cornflakes mixture and mix all ingredients.
- Set aside for 15 minutes to allow the muesli to soften.
- Using a tablespoon of the mixture, and place on the prepared trays and press out slightly.
- Bake for 10-12 minutes or until the biscuits are golden brown.
- Move the trays aside on allow to cool for 10 minutes before transferring to cool on a wire rack
