Gluten Free Biscuits

The Gluten Free Biscuits are an idea snack for people with diabetes.

Ingredients
  • 45g (1 cup) gluten free cornflakes
  • 130g (1 cup) Food for Health The Gluten Free Muesli
  • 1 ½ tablespoons gluten free self-raising flour
  • ¼ cup SPLENDA Granulated Sweetener
  • 1 egg
  • 20g 40% reduced-fat sunflower spread, melted, cooled
  • 1 tablespoon 100% apple juice

Directions
  1. Preheat the oven to 180°C. Line 2 baking trays with baking paper.
  2. Put cornflakes, muesli, flour and sweetener and blend ingredients.
  3. Put the egg, spread and apple juice in a separate bowl and combine ingredients.
  4. Add the egg mixture to the cornflakes mixture and mix all ingredients.
  5. Set aside for 15 minutes to allow the muesli to soften.
  6. Using a tablespoon of the mixture, and place on the prepared trays and press out slightly.
  7. Bake for 10-12 minutes or until the biscuits are golden brown.
  8. Move the trays aside on allow to cool for 10 minutes before transferring to cool on a wire rack

Makes 12 biscuits
